SIBOYA CHICKEN CASHEW
(Lunch for 1 or serves 2 as a side dish)
| Stir fry in a wok... (until just done) | ||
| 200g (8 oz) | - | boneless chicken strips |
| In a mixing bowl, add... | ||
| 1/4 | - | of a white onion (coarsely chopped) |
| 5 mL (1 tsp) | - | palm sugar (sub white sugar) |
| 45 mL (1.5 Tbs) | - | Tom Yum paste (Mae Pranom) |
| 45 mL (1.5 Tbs) | - | oyster sauce |
| splash | - | of Chinese cooking wine |
| 4 slices | - | of banana pepper (or sub) |
| 1/4 C | - | chicken broth |
| 1/2 C | - | cashews |
Add to the wok...
when the chicken is cooked, add the above ingredients and stir fry for 2 minutes.
Garnish...
with 1 chopped green onion and few sprigs of cilantro, serve with Jasmine rice.
