SIBOYA CHICKEN CASHEW
(Lunch for 1 or serves 2 as a side dish)

Stir fry in a wok... (until just done)
200g (8 oz) - boneless chicken strips
In a mixing bowl, add...
1/4 - of a white onion (coarsely chopped)
5 mL (1 tsp)  - palm sugar (sub white sugar) 
45 mL (1.5 Tbs)  - Tom Yum paste (Mae Pranom) 
45 mL (1.5 Tbs)  - oyster sauce 
splash - of Chinese cooking wine 
4 slices  - of banana pepper (or sub) 
1/4 C  - chicken broth 
1/2 C  - cashews 

Add to the wok...
when the chicken is cooked, add the above ingredients and stir fry for 2 minutes.

Garnish...
with 1 chopped green onion and few sprigs of cilantro, serve with Jasmine rice.
